Be ready for cold days with a bowl that feels warm, bright, and just a little different from the usual chicken soup. This Golden Chicken Soup is light, cozy, and full of flavor, with tender chicken, carrots, parsley, orzo, and a beautiful golden broth. The little twist is what makes it special: a small spoonful of finely chopped pickles at the bottom of the bowl, fresh lemon on top, and something crispy on the side.

Instructions
Heat the olive oil in a large pot over medium heat.
Add the onion and cook for 3–4 minutes, until softened.
Add the garlic and cook for about 30 seconds.
Pour in the chicken broth. Add the chicken, carrots, turmeric, thyme, bay leaf, salt, and black pepper.
Bring to a gentle boil, then reduce the heat and simmer for about 20 minutes, until the chicken is cooked through and the carrots are tender.
Remove the chicken, shred it with two forks, and return it to the pot.
Add the orzo and cook until tender, usually about 8–10 minutes.
Stir in the fresh parsley during the last 5 minutes of cooking.
Taste and adjust the seasoning.

To Serve
Place about 1 tablespoon of finely chopped pickles at the bottom of each bowl. Ladle the hot golden chicken soup over the pickles. Top with a small lemon wedge. Serve with toasted baguette slices, pita crisps, or light crackers on the side.
The turmeric gives the broth a beautiful golden color, the parsley keeps it fresh, and the little bit of pickle at the bottom adds just enough tang without overpowering the soup. Warm, light, comforting — and definitely not boring chicken soup.
