This is the beef-and-rice dinner nobody expects to love quite this much. Tender pieces of beef simmer in a rich tomato sauce with onions, garlic, smoky spices, and chopped dill pickles. The pickles melt into the sauce and add a bright, savory tang — not an overwhelming pickle flavor. Rice cooks right in the same pot, soaking up every drop of the sauce.

Instructions

  1. Brown the beef

    Pat the beef dry and season with 1 tsp salt and the pepper. Heat oil in a Dutch oven over medium-high heat and brown the beef in batches, leaving room between pieces. Set aside.
  2. Build the base

    Reduce heat to medium. Cook onion and bell pepper 5–6 minutes until softening. Add garlic and jalapeño, cook 30 seconds until fragrant.
  3. Season and simmer

    Stir in tomato paste, cumin, smoked paprika, chili powder, and oregano; cook 1 minute. Add tomatoes, broth, pickles, pickle juice, and remaining salt. Return beef with juices, bring to a simmer, cover, and cook on low 60–75 minutes until beef is almost tender.
  4. Cook the rice

    Stir in the rinsed rice. Cover and continue cooking on low 18–22 minutes until rice is tender and has absorbed most of the sauce. Add a splash of broth if it dries out too soon.
  5. Rest and finish

    Remove from heat and rest, covered, 10 minutes. Stir in cilantro and lime juice; taste and adjust salt.
