Instructions
Prepare the meatballs
Preheat oven to 425°F. Line a baking sheet with parchment. Mix turkey, egg, breadcrumbs, grated onion, garlic, cilantro, green onions and spices gently — don't overmix. Roll into ~18 meatballs, brush with olive oil, and bake 15–18 minutes until centers reach 165°F. Broil the last 1–2 minutes for color.
Make the sauce
Blend roasted peppers, walnuts, garlic, tomato paste, pomegranate molasses, lemon juice, paprika, cumin, salt, pepper and olive oil until mostly smooth. Add broth to loosen. Warm in a skillet 4–5 minutes; taste and adjust lemon or pomegranate molasses.
Make the cilantro drizzle
Blend Greek yogurt, cilantro, garlic, lime juice, water and a pinch of salt until smooth and pale green.
Finish the dish
Add baked meatballs to the warm sauce and turn gently to coat. Simmer 3–4 minutes. Transfer to a serving dish, drizzle with cilantro sauce, and finish with walnuts, cilantro, feta, or pomegranate seeds.
